Apple Maple Cake        

1 large McIntosh apple
1 tsp. baking powder
6 Tbsp.  unsalted butter
1/4 tsp. salt
1 1/2 cup unbleached flour
1 large egg
1/2 cup milk
3/4 cup maple syrup

Preheat oven to 350 degrees, adjust rack to lowest position.  
Butter an 8 inch cake or spring form pan.  Line the bottom with a
parchment or foil.  Butter top of parchment  and dust with flour,
tapping out any extra flour.  Peel and core the apples.
Cut in half and into 1/2 inch pieces.  Melt 2 Tbsp. butter in a
saucepan.  Add apples and saute until tender.  Drain and set aside.  
Beat remaining butter until smooth and light in color.  Slowly beat in
the egg and maple syrup. Sift the flour, baking powder and salt
together.  Add alternately with the milk.  Fold in the apples and spoon
into the pan.  Bake for 50 minutes or until a tooth pick pulls clean
from the center.  Cool in the pan for 10 minutes.  Turn out onto a
rackand cool for 30 minutes. Slice additional apples and fan around
the top edge.  Whip some cream and mound in the center before
